I am a real sucker for cheese.
Any kind of cheese.
My theory is that cheese could make a stone taste good.
So in a crunch, cheese can be used to put together any kind of meal – serving as the protein in a main course, adding flavour and protein to a salad, a go-to for snack time, and of course, a beloved source for appetizers.I recently had a wheel of brie in the fridge and wanted to assemble an appetizer. This was an experiment, but it turned out great. It was easy to do, I used what I had in the fridge, and the end result provided a sweet and savory flavour.
To make this, I used fresh raspberries, brie cheese, and a balsamic glaze.
I sliced the cheese into small pieces, and stuffed the little pieces into the raspberries. I put the stuffed berries on an oven safe dish.
Once the berries were all stuffed, I sprinkled the balsamic glaze
over them, and baked them at 350 degrees for 10-15 minutes. Keep an eye on them – you will know when they’re done. You want the cheese slightly melted and the raspberries juicy.
Remove from the oven and enjoy!
