“Impossible” Cheeseburger Pie

A friend’s daughter recently graduated from high school, and the friend asked for recipes for her “college survival kit.”

I dug out this recipe of my mother’s because it’s an easy and tasty supper dish, and great for a student because it would give her several portions at a reasonable cost. The Bisquick holds the ingredients together like a pie, without the work of making a pie shell.

Just reading it inspired me to make it. It’s so simple and delicious, and it can be modified to suit your tastes. For instance, you can subtract the onions, add taco seasoning while cooking the meat, and throw in peppers and green onions with the cheese to make “taco pie.”

But the basic recipe is delicious and simple. You will need ground beef, onions, garlic, cheese, milk, eggs and Bisquick. I added some chopped oregano and parsley from the garden.

First, brown one pound of ground beef with garlic and chopped onion.  Feel free to add spices to your tastes – hot sauce, Worcestershire sauce, a blob of ketchup, and of course salt and pepper are all good options. Fry the beef for about 6-8 minutes, until cooked but not over-done.

Drain any excess fat from the beef, then spread the mixture in the bottom of a greased, 9-inch pie plate. Mix together the milk, eggs and Bisquick and have ready.

Spread the grated cheese over the meat mixture.

Then pour the Bisquick mixture over the meat and cheese.

Bake in 400F oven for 25 minutes or until a knife in the centre comes out clean. Let cool about 5 minutes and cut into slices.

This didn’t last long – it went so quick that I didn’t even get a picture of the individual slices! The printable recipe is below.

Impossible Cheeseburger Pie

Ingredients

  • 1 pound ground beef
  • 1/2 cup chopped onion
  • clove of garlic
  • 1/2 tsp salt
  • 1 cup shredded cheddar cheese
  • 1/2 cup Bisquick Original baking mix
  • 1 cup milk
  • 2 eggs

Directions

Heat oven to 400F

Grease a 9-inch pie plate

Cook beef, garlic and onion in skillet until brown, about 6-8 minutes. Add spices as you wish during the cooking process (the salt, minced garlic, pepper, hot sauce).

For variation, try mixing in taco seasoning while cooking to make “taco pie.” You can throw some diced peppers and green onions in with the cheese, or serve them with the pie and some salsa.

Drain fat from beef.

Spread beef mixture in the bottom of the pie plate. Sprinkle with cheese.

Whisk together baking mix, milk and eggs in a medium-sized bowl. Pour over beef mixture in pie plate.

Bake in 400F oven for 25 minutes or until a knife in the centre comes out clean.

Let cool about 5 minutes and cut into slices.
